I have been on the go quite a bit lately & days when I find myself at home for 90% of the day, I relish in it. I take advantage of staying in my pajamas way past the acceptable point, mark off home chores & rewatch favorite episodes or favorite holiday movies. I may have started watching Christmas movies already; this shouldn't be a surprise to any of those who know me.
But that's besides the points. The days that I spend the majority of my time at home, I do my best to avoid crockpot & those quick & easy meals. Throwing together a variety of ingredients to put a wholesome, soul-warming meal on the table is something I live for, most days. However, you throw that phrase "one pot meal" out there & my little heart begins to sing, because my sink is always of dishes. Whether they are meal dishes, baking dishes, or the ten thousand cups Benjamin uses in a single day, its full. Add in the word pasta & ahhhhh, the my stomach angels are singing.
This Chicken Alfredo Pasta is a fan favorite in the house & while I'm lactose intolerant, I take a handful, okay not a handful, but several pills to combat all that dairy goodness my stomach loves to hate. This dish also makes enough to feed a small army, so we eat leftovers for a few days & I'm pretty convinced the leftovers are better than the fresh out of the pan serving.
Probably the most favorite part of this dish for me, is I don't have to cook the noodles ahead of time. You literally dump it all together in it's baking dish & cook it. Ba-da-bing ba-da-boom!
Ingredients:
2 cups cooked boiled chicken, diced
1/4 tsp ground pepper
2 tsp minced garlic
3 cups chicken broth
1 22oz jar alfredo sauce
16 oz rotini noodles, uncooked
2 cups mozzarella cheese, shredded
Preheat oven to 425° F.
In large casserole dish, combine chicken, pepper, garlic, chicken broth, alfredo sauce & rotini noodles. Cover tightly with aluminum foil & bake for 30 minutes.
Remove from oven, uncover, stir well & top with mozzarella cheese. Return to oven & bake uncovered for 10 minutes.
Let casserole "set up" for 10 minutes before serving. Serve with salad.
Like I said before, this feeds a small army, so prepare yourself for leftovers or perfect for a dinner party.
